RECIPE OF THE WEEK:

If you dont try anything else Ive posted PLEASE try this recipe! I actually had this at a cooking station set up in Publix one day and thought it was wonderful and I HATE steak, yes HATE steak. So I took the recipe card and held onto it forever thinking I HATE steak, but since my hubbs LOVES steak I decided to try it. LOVE once again! And the best part is it only takes about 12 min to cook!

MEDITERRANEAN STEAKS
3 cups fresh spinach leaves, coarsely chopped
1 1/2 lb boneless beef ribeye steaks**
1/4 teaspoon salt
1/8 teaspoon pepper
1 tablespoon butter
1/4 cup pre-diced red onions
1/4 cup crumbled feta cheese
1/4 cup Italian bread crumbs
2 tablespoons sun-dried tomato pesto


Prep
Chop spinach; place in microwave-safe bowl.

Steps
Cover spinach; microwave on HIGH 2–3 minutes or until tender. Drain thoroughly.
Preheat large sauté pan on medium 2–3 minutes. Cut steaks into 4 smaller portions (almost bite-sized); sprinkle both sides with salt and pepper (wash hands). Place butter in pan, then add steaks and onions; cook steaks 5–6 minutes on each side or until 145°F (for medium-rare). * we like ours a little more on the pink side Stir feta cheese, bread crumbs, and tomato pesto into spinach.
Spread 1/4 cup spinach mixture over top of steaks during last two minutes of steak cook time. Carefully turn steaks and spinach mixture over to heat topping; cook 1–2 more minutes or until golden and slightly crusty. Gently turn steaks over and serve.
** We used 2 filets since i'm a newby on beef

We served this with asparagus and Acorn Squash- a new fave! Maggie taught me how to cook this one, ready for her secret....8 min in the microwave. I seasoned w salt & pepper and TA-DA! Wesley LOVED this too!

FRO-YO


So these frozen yogurt shops are big trend right now. Last week we tried out the new PLANET LIVING in Buckhead. It is in the peach shopping center on Peachtree. They have 5 flavors Peach, Mango, Pomegranate, Chocolate, and Original Tart. You fix your own, add your toppings and pay by the ounce. If you must know mine was more than Wesleys, but he had chocolate peanut butter cups and i chose fruit which has to weigh more right?
It is also still a smoothie place and a juice bar. I suggest the pomegranate and mango swirl!

Football and Mexican...and pizza?

This weekend we celebrated Kate's birthday. She turned the big 23! Wesley's mom, dad, and sister all came up to help her add another notch to her age. We went to Tin Lizzy's and watched the football games and munched on chips and salsa to go with our margaritas!

We all had ALOT of fun and headed back to the house to watch the Auburn game. We ordered pizza for dinner and when i brought it inside I accidentally dropped the box...oops! This is what it looked like when we opened it.

It was still good and I had a great time visiting with the in-laws!

Oh Wait where was Mr. Wesley?? He snuck off to Auburn again to watch the game in person! War Eagle!

REAL HOUSES OF ATLANTA

So this weeks house was supposed to unveil my DREAM HOME. There is this one house that I LOVE and I am so sad it didnt photograph like I had hoped. The landscaping is outrageous and covers up so much of the house from my camera view. I have taken Wesley and my mom by it to show how lovely it is. I am going to include them to show you any bits and pieces you can get but you will have to trust me on this one.

I love the stained bead-board on the ceiling of the porch, the wrap around porch, the stacked stone, the...sigh. This house is by the Top Hat Soccer Fields on Fairfield Rd.

Since that was a bit of a bust here is another beautiful house on the same street as my Dream Home. This would work too you know.

Playground Decor


Reese and I collected these at the playground this week. I have NO IDEA what they're called, But they did fall from a tree. Anyone know what these are?

I put them in one of my R.Wood bowls on the table and it looks so cute. The POP of green really helps on those dark parsons tables. I love the look and they were FREE!

Tailgate Time


This past Saturday we went to Auburn for the Auburn vs Clemson game. It was a 6:00 game so we got to tailgate ALL day! It was so fun to see all of our friends and spend the day with them in the 96 degree weather. SO HOT!!! But the tigers came out with a Win so hubby was happy!

I fixed Corn Dip a recipe from my old roommate Jennifer, and Good Ole' Peanut Butter & Jelly Sandwiches, and Symphony Brownies. Now I know most of you have had these little bites of heaven but just in case you forgot about them or need to take something sweet to the next tailgate these are PERFECT!

Symphony Brownies
1 Box of Betty Crocker Fudge Brownie Mix
(eggs, water, and oil as box directs)
3 symphony candy bars with almond and toffee

Mix brownies as directed on box. Pour half the mix into greased 11x7 in pan lay symphony bars on top of mix. (break up to fit)
Pour the rest of the mix on top. Bake at 350 for 40 min. Let cool before slicing...if you can wait!
CAUTION: THESE ARE EXTREMELY ADDICTING!

Back to the Beach

This past weekend we went back down to the beach to celebrate Wesley's cousin, Blair's Wedding! It was so pretty and the weather could not have been more beautiful.

VMA fashion??

I watched the VMAs last night and I have to admit I was actually really excited about the show because my fave girl Chelsea Handler was hosting. I couldnt find a pic, but I thought she looked awesome in the red dress. Her hair was PHENOMENAL!!! Lady Gaga on the other hand is insane. Not only was her "white" carpet look wierd, but the MEAT dress? Woa! CRAZY LADY!

And Snookie....did you get that dress from Body Shop? Who taught her how to pose?

Geez.. to think how much thought and effort I would put into my outfit and THEY get to walk the carpet! : )

John Mayer Concert


Last night Wesley and I went to the John Mayer concert, remember this is the gift he gave me for our 1 year anniversary. Owl City was the opening act and besides their hit "Fireflies" they weren't anything to write home about.

It was good to see John Mayer perform as always.


I was about 99.999999% sure some narcotics were taken prior to the show, and then he told the crowd "Im high as a Kite right now", sooo CONFIRMED! Can you tell?

AND because im around kids all the time I also noticed JM was wearing a SILLY BAND. If you dont know, these are all the rage right now for kids. I knew Lanier would like this so I snapped a pic.


The concert was really fun....so much fun while we were there we bought tickets to the Kings of Leon concert next Wednesday! Whew!

Beach Time

This past weekend Wesley and I went down to the beach with the Griffins and the Campbells. It was so relaxing and the weather was perfect. We spent most of our time on the beach and going to nice dinners. Besides the group ICE that happened the first night

one of the best parts was our girls trip to check out Alys Beach

It is so beautiful and unique

and one of the perks was Steve Penley was there (which you all know is on my LIST to own one day). You have to check this place out next time your down 30-A!
This is our third year labor day-ing it with this group and every year is so special! Thanks Maggs for letting us stay there!
